Trapper's Sushi Enumclaw menu: 9 dishes, no Enumclaw roll

Trapper's Sushi Enumclaw menu: nine dishes with prices, how the all-you-can-eat sushi bar works, and happy hour and hours on Cole Street as of October 2026.

As of October 2026, Trapper's Sushi Co., at 1537 Cole Street in downtown Enumclaw, is one of 15 restaurants in a chain that started in Bonney Lake. Its menu is built on rolls: 67 on the current Washington main menu, by this site's count, all but two priced from $10 to $19.75, plus teriyaki, an all-you-can-eat sushi bar and nigiri, which is a topping, usually fish, on a pad of pressed rice. Prices are as listed on the Washington main menu linked from Trapper's menu page and on its online ordering page for Enumclaw on October 6, 2026, and change; an older photo catalog lower on the menu page shows different prices for several rolls.

Trapper's said in 2024 that rolls like the Bonney Lake and the Puyallup are "named for Trapper's locations and the places and things we love," and the menu has a Bonney Lake, a Covington and a Puyallup, three of the chain's first four towns, plus a $13 roll called Sushi Town, the name the founder, Trapper O'Keeffe, gave his first restaurant in 2004. There is no Enumclaw roll on the menu or the ordering page. Bonney Lake had a 19-year head start: the Courier-Herald reported in January 2023 that Trapper's was opening that month.

1. The Bonney Lake roll

The Bonney Lake ($17) is crystal shrimp, which the kids' menu explains is breaded shrimp, rolled with cream cheese, fried in tempura batter and covered in spicy crab, teriyaki and sriracha. In 2022 the chain's marketing coordinator told the Foothills Focus that it was by far Trapper's most popular item, and as of October 2026 the ordering page still names it among four "very popular rolls" on a game-day platter. It rides on the Family Yacht, a $70 sushi boat of six rolls and 12 gyoza, the menu's fried pork pot stickers.

2. The Covington roll

The Covington ($16.50) wraps tempura shrimp, tempura asparagus, spicy crab and cucumber under tuna, teriyaki, green onion and Covington sauce, a house sauce the menu names but never describes; it turns up on ten of the 67 rolls, one of them the Crab Catcher in a back section the menu calls Trapper's Archives. Covington was the second restaurant: O'Keeffe "opened the restaurant that bears his name in Covington" in 2009, the Covington Reporter wrote that November, when the Bonney Lake shop was still Sushi Town.

3. The Puyallup roll

Salmon, avocado and cream cheese, fried in tempura and finished with Covington sauce, teriyaki and green onion, make the Puyallup ($15.50). Trapper's listed it with the Bonney Lake, the Mountain and the Sounder as fan favorites in 2024, and it is on the all-you-can-eat lunch menu and the Family Yacht.

4. The Sushi Town roll

Sushi Town ($13) is tempura shrimp, avocado and white onion with spicy sauce, teriyaki and masago, which the menu identifies as smelt roe. O'Keeffe told the Covington Reporter in 2009 that one regular at his first restaurant came 34 days in a row. "He stopped coming because his wife saw the debit card statement and it said, 'Sushi Town, Sushi Town, Sushi Town,'" he said.

5. The Mt. Rainier roll

Start with the Mountain ($18): crystal shrimp and spicy sauce under tuna, salmon, albacore and spicy crab, with teriyaki, green onion and masago. The Mt. Rainier ($19.25) is the same roll with spicy cooked scallops added, so the difference between a mountain and Mount Rainier is scallops and $1.25. Both are on the all-you-can-eat lunch menu, and four pieces of each go into the $27 Long Roll Variety, with the Trapper and the Buddha.

6. The Vader roll

Tempura-fried avocado and cream cheese under spicy scallops and spicy crab, with masago, green onion, teriyaki and sweet chili sauce, is the Vader, at $19. The Skywalker, snow crab and avocado under torched spicy tuna and Covington sauce, is $17, so the dark side costs $2 more. The Vader is also an all-you-can-eat dinner specialty roll, limited to one; the Skywalker is on neither all-you-can-eat sheet.

7. The Samantha roll

The Samantha tops lobster and tempura avocado with a lobster and scallop mix in spicy garlic sauce, torched and finished with teriyaki. At $23.50 on the Washington main menu and $23 on the ordering page, it is the priciest roll on either, and the main menu says $1 from each one sold goes to Valley Girls & Guys, a Washington cancer charity, for which Trapper's said in 2024 it had raised and donated nearly $2 million. The older photo catalog still lists it at $22.95, with $2 a roll to the charity.

8. The signature nigiri flight

Nigiri comes two pieces to an order, from $5.50 for egg or fried tofu to $8.50 for tuna or yellowtail. The Trapper's Signature Nigiri Flight ($19) is six pieces, from torched garlic miso sauce on the salmon and the shrimp to truffle ponzu, a citrus soy sauce, and jalapeño on the yellowtail; the menu allows no substitutions.

9. The $16 weekday lunch special

From 11 a.m. to 2 p.m., Monday through Friday, any two of 11 half rolls, the Bonney Lake and the Trapper among them, cost $16 with miso soup. In the same hours a build-your-own bento with miso soup and rice is $19: a half roll, gyoza or tempura vegetables, and chicken teriyaki, nigiri or sashimi, the sliced raw fish served without rice.

How does all-you-can-eat work at Trapper's Sushi in Enumclaw?

You sit at the sushi bar and order from a separate menu as often as you like: lunch from 11 a.m. to 3 p.m. and dinner from 11 a.m. to 8:30 p.m., every day, and for dinner you must be at the bar before 8:30, Trapper's FAQ page says. The site gives no price, time limit, leftover charge or children's price, so call (253) 236-8712.

The lunch sheet lists 32 rolls and ten appetizers and salads; the dinner sheet, 17 nigiri, eight other long rolls and nine specialty rolls, one of each. Both ask for no sharing or waste and allow no takeout, and gluten-free all-you-can-eat costs $8 more. O'Keeffe, who by his own 2009 account started the sushi bar at the Muckleshoot Indian Tribe's casino before Sushi Town, gave the business case then: "We do all you can eat and we do that because it keeps your product fresh and you get a high turnover."

Is there a happy hour at Trapper's Sushi in Enumclaw?

Trapper's Enumclaw page lists happy hour from 2 to 6 p.m. Sunday through Thursday and from 8 p.m. to the 9 p.m. close Friday and Saturday. The specials menu linked as Happy Hour takes half off appetizers and the bar menu and 15 percent off rolls, dine-in only, and adds all-day happy hour in the bar on Sundays, though items may vary by location; the one linked as Drinks says 25 percent off rolls, so ask.

What are the hours at Trapper's Sushi in Enumclaw?

As of October 2026 the dining room is open 11 a.m. to 9 p.m. daily, by the Enumclaw page, and app pickup and delivery orders and third-party delivery stop at 8 p.m. The page says lunch is 11 to 2 daily; the menu's $16 special and $19 bento are weekdays only. No holiday hours are listed, so call before a holiday.

Is there a kids' menu or gluten-free food?

Trapper's posts a kids' menu for children 10 and under and a gluten-free menu; its main menu lists six rolls under Veggie. Kids' meals, from Crystal Shrimp to Happy Mac & Cheese Bites, are $8.95 each on the ordering page, which says they come with sliced apples and, for all but the two kids' rolls, rice; the kids' menu, which is marked 2021, prints $8 and adds a soda or juice box. On Sundays the specials menu offers one free kids' meal per child under 10 with the purchase of an adult meal, dine-in only.

The gluten-free menu, marked 2022, wraps its long rolls in soy paper instead of nori, the usual seaweed sheet, and warns that the kitchen is not gluten-free and cannot guarantee any item is entirely free of gluten. The FAQ says the tempura batter has no egg, milk or meat but is made in a plant that handles all three. Ask the kitchen about any allergy.

Before you go

Trapper's is in the Jensen Building, which King County's assessor dates to 1915, between Griffin and Initial avenues; the Trommald Building next door is on the downtown walking tour. On the day, check the Enumclaw page, which links to reservations, and call for the all-you-can-eat price. Every Washington check carries a 3 percent surcharge that Trapper's keeps and that is not a tip, the main menu says, though the all-you-can-eat menus call it a credit card processing charge on credit card transactions; parties of 10 or more pay an 18 percent gratuity.
